Servings: 9 pancakes
Ingredients
  • 1 large, very ripe banana, mashed
  • 1 cup almond milk
  • 1 tablespoon apple cider vinagre
  • ½ teaspoon each of cinnamon and cardamon
  • teaspoon dried ginger powder
  • 1 ¾ cup all purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch of salt
  • vegan butter for frying
Instructions
  1. Mix the mashed banana, almond milk, apple cider vinegar and spices in a mixing bowl. Let the mixture sit for 10 minutes.

  2. Blend the flour, baking powder, baking soda and salt in another bowl. Fild into the milk mixture until just combined. Do not over stir, then you will end up with chewy pancakes!

  3. In a large skillet, melt a little butter and ladle ¼ cup batter in the pan. Fry the pancakes over medium heat until the bottom is golden brown and bubbles start to form at the top, about 2-3 min. Flip and cook for about 1-2 min more until golden brown.

    Serve this delicious breakfast with maple syrup and fresh berries.
